Easy Weeknight Lemon Garlic Shrimp Scampi
I love finding easy recipes, especially in the summer. Our schedules are hectic and no one wants to stand in a hot kitchen. And Shrimp is my daughter's favorite food, so it's always a plus when I know she'll eat what I make for dinner without putting up a fight.
And we love healthy options around here - and remember, healthy doesn't have to complicated or expensive - just delicious! We rarely have leftovers, but when we do, it tastes great the next day for an easy lunch.
With just a handful of ingredients about about 20 minutes, you can have dinner on the table. I save time by buying frozen shrimp from Aldi and defrost them the day before. Make sure you thaw the shrimp before you start cooking.
One of my favorite, and most handy tools, is my lemon juicer. For recipes like this when you only need 2 lemons, a hand juicer is the easiest way to get the juice you need. Ours has a handy pouring spout, but I like to strain it first so only the juice makes it in the recipe, and not the seeds and pulp! Our exact juicer is sold out, but here is a similar one.
Ingredients for Lemon Garlic Shrimp Scampi
2 Tbsp Butter
1lb Frozen Shrimp, peeled
1 Tbsp Minced Garlic
2 Lemons, freshly squeezed
1/2 cup Chicken Broth
8oz Angel Hair Pasta
Salt and Pepper to taste
In a large pot, boil water and cook pasta according to directions
Melt butter in a nonstick skillet over medium-high heat
Add shrimp, salt and pepper, and minced garlic. Cook until the shrimp are pink (2-4 minutes), stirring occasionally
Stir in chicken broth and lemon juice, and bring to a simmer.
Toss with pasta and garnish with parmesan cheese, if desired. Serve immediately!
It's really that easy. And it's 100% kid approved (see below!) A summer staple in our house, I'm sure you'll love it too.
