Berry & Cream Swirl Popsicles

'Tis the season to be hot and sweaty... and if you're like me and my girls, you love a good popsicle. But... I tend to be more of an ice cream person, and these hit the mark. Since I'm focusing on a low carb/low fat diet right now, I wanted something that wasn't chock full of sugar and lots of unhealthy additives.


The best part of these pops is that you can substitute any kind of fruit. YOu like bananas? Mash up some with honey. You want strawberries? Great! Mango? Go for it. They're so versatile and delicious. This is a really good way to use up fruit that is slightly past ripe, so get creative!




Berry & Cream Popsicles

 

Ingredients:

1 1/2 cup fruit

2 1/2 cup plain yogurt or Greek yogurt

1 Tbsp honey

splash of milk


  1. In a sauce pan, reduce the berries and honey over low-medium heat. Stir occasionally to release the juices. Smash some berries until a puree has formed. This will take about 20 minutes, don't rush it! (If you are using bananas, mash them with the honey instead of making a reduction) Once reduced, remove from heat and let cool.

  2. Stir together yogurt and milk so that it is a pourable consistency

  3. Carefully mix in berry reduction. Using a knife, gently swirl the berry mixture into the yogurt. If you stir everything together, the popsicles will be purple and not have a pretty swirl.

  4. Pour the mixture into popsicle molds. Place popsicle sticks into the molds and freeze for a few hours. If you don't have popsicle molds, you can use small paper cups.

  5. After the popsicles have set and are frozen, run under lukewarm water to remove from the mold.
