St. Patrick's Day Shamrock Tea Sandwiches

Ingredients:

  • 4 slices of sandwich bread

  • 1/2 English cucumber, sliced

  • 4 ounces of cream cheese, softened

  • 1 tablespoons of fresh dill, chopped

  • Salt and pepper, to taste

  • Shamrock cookie cutter

Instructions:

  1. Prepare the dill cream cheese filling by combining the softened cream cheese, chopped dill, salt, and pepper in a bowl. Mix well until all the ingredients are evenly distributed.

  2. Next, thinly slice the cucumber using a mandoline or a sharp knife. You'll need about 32 slices, depending on the size of your cucumber. Cut the slices in half.

  3. Using the shamrock cookie cutter, cut out shamrock shapes from the slices of bread.

  4. Spread a generous amount of the dill cream cheese filling on one side of each shamrock-shaped bread slice.

  5. Place cucumber slices on top of the cream cheese filling on one shamrock slice.

  6. Repeat with the remaining bread slices, cream cheese filling, and cucumber slices until all the sandwiches are assembled.

  7. Serve the shamrock-shaped cucumber tea sandwiches on a platter and enjoy! Double or even triple this recipe depending on how many people you're hosting!
