Spinach, Tomato, & Feta Stuffed Bread

We are suckers for good bread. Especially when it's stuffed with cheese. The tangy feta paired with savory spinach and tomato remind me of so many of my favorite Mediterranean-inspired dishes. Only this is stuffed inside a soft french bread. When sliced, it is perfect for a holiday appetizer. During the holidays, we love to graze and snack when we have company over - so this is the perfect appetizer for us.


I used 1 long french baguette, but the filling makes enough for 2 smaller french loaves. This could also be served in a bread bowl and served as a dip. It is super versatile and a welcomed change to a lot of the sweets that grace our tables during the holidays.



One of the best parts about this is that it can be made ahead of time so you're not spending all day in the kitchen on the day of festivities. Hollow out the bread and cover, and once the filling is mixed, place in the fridge until it's time to assemble. The [second] best part? It's only 8 easy-to-find ingredients. All of 10 minutes and it is prepped. Can't beat that!


There's a lot of cheese - cream cheese, feta, and mozzarella. Mix in some spinach and tomatoes, bake it in bread and it sounds pretty delicious, right? Serve sliced and it's an winning appetizer for any crowd.

 



Spinach, Tomato & Feta Stuffed Bread


Ingredients:

  • 1 French Baguette

  • 4 oz fresh spinach (or thawed frozen spinach)

  • 8 oz cream cheese. softened

  • 1/2 cup cherry tomatoes, quartered

  • 1/4 cup Duke's mayonnaise

  • 2 Tbsp milk

  • 1 container Feta cheese

  • 1 cup Mozzarella cheese

Instructions:

  1. Preheat oven to 350°

  2. Slice off the top of the bread, horizontally. Scoop out the interior of the soft bread, leaving the outer crust

  3. In a medium sauce pan over medium-low heat, combine softened cream cheese, milk mayo, spinach, and tomatoes. Lightly cook down until ingredients are well combined. Remove from heat

  4. Gently fold in 3/4 cup of mozzarella and 1/2 container of feta and mix

  5. Fill the bread with the cheese and spinach mixture and top with remaining mozzarella

  6. Bake for approximately 20-25 minutes or until the top is bubbling

  7. Top with remaining feta and serve warm
