Turkey Eggroll in a Bowl
I've seen a lot of recipes like this under a lot of different names - deconstructed eggrolls, eggrolls in a bowl, crack slaw... regardless of the name, this version is so. freaking. good.
When I first started looking for low carb, healthy recipes, my sister-in-law recommended making Crack Slaw, something I had never heard of before. Naturally, I had to try it.
What takes this over the top is the sauce. I'm a huge fan of sauces and love every recipes that has condiments involved. This sauce is the best, and a healthy alternative to regular "mayo" sauces.
Eggroll in a Bowl
Ingredients
4 cloves of garlic, minced
1/2 red onion
2 Tbsp sesame oil
1lb. ground turkey
1Tbsp rice wine vinegar
1 tsp white pepper
1 tsp salt
1/2 head cabbage shredded
1 carrot, shredded
1 Tbsp gochujang
1tsp soy sauce
1/4 cup Greek yogurt
In a wok, heat sesame oil over medium heat. Sauté garlic and red onions until onions are translucent.
Add in turkey, white pepper, rice wine vinegar, and sriracha until turkey is fully browned.
While the turkey is cooking, whisk together Greek yogurt, gochujang, and soy sauce in a small bowl. Set aside.
Gently toss in 1/2 head of shaved cabbage and carrot until cabbage is tender.
Drizzle with the "mayo" and serve!
I was unsure if this recipe would be a hit, but it absolutely is! Even the kiddos loved it :)
