Ingredients
1yellow onionthinly sliced
3Tbspbutter
1/4cupred wine
3cupsbeef broth
1cupmilk
16ozdry pasta
1bay leaf
salt and pepper to taste
1cupGryuere
Instructions
Melt butter over medium heat and cook onion until tender (about 5-7 minutes).
Season with salt and pepper.
Deglaze pan with red wine and add in beef broth, bay leaf, and milk.
Bring to a light simmer and add pasta.
Cover and cook for about 12-15 minutes or until pasta is al dente.
Remove from heat.
Stir in gruyere and let sauce thicken slightly.
Serve immediately and ENJOY!
Notes
This French onion pasta is rich and satisfying on its own, but it pairs beautifully with a crisp green salad dressed simply with lemon and olive oil. A side of roasted green beans or asparagus adds balance and freshness.
