- 1 16 ounce bag coleslaw mix
- 1/2 cup Duke’s mayonnaise
- 2 tablespoons sugar
- Salt and black pepper to taste
- 1 1/2 tablespoons apple cider vinegar
- A touch of lemon zest
- 1 tablespoon fresh lemon juice
- A splash of buttermilk whole milk, or heavy cream
In a large bowl, whisk together the mayonnaise, sugar, apple cider vinegar, lemon zest, lemon juice, salt, and pepper.
Slowly add a splash of milk or cream until the dressing reaches a smooth, pourable consistency. You want it creamy but not thick or stiff.
Add the coleslaw mix to the bowl and gently stir until every bit of cabbage is coated in the dressing. You can also transfer everything to a large container with a lid and give it a good shake if you prefer. Both methods work beautifully.
Cover and refrigerate for at least 30 minutes before serving. This resting time allows the flavors to develop and the cabbage to absorb the dressing. Give it one final stir before serving and adjust seasoning if needed.
Taste before serving. Cabbage varies in sweetness, so you may want an extra pinch of salt or a touch more vinegar depending on your preference.
If you like a little more texture, you can add thinly sliced green onions or a handful of chopped parsley. Keep it simple so the classic flavors shine.
