For the Slaw
- 1 14 or 16 oz bag of coleslaw mix
- ½ head red cabbage thinly sliced
- 1 cup shredded carrots
- 1 cup shelled edamame steamed and cooled
- Green onions thinly sliced, for garnish
- 1 pkg Raw ramen noodles crumbled, for garnish
For the Dressing
- ¼ cup toasted sesame oil
- 3 Tbsp rice wine vinegar
- 2 Tbsp maple syrup
- Pinch of red pepper flakes
- Dash of garlic powder
- Pinch of salt
Make the Slaw Base: In a large mixing bowl, combine the coleslaw mix, red cabbage, shredded carrots, and edamame.
Mix the Dressing: In a jar or small bowl, whisk (or shake) together the sesame oil, rice wine vinegar, maple syrup, red pepper flakes, garlic powder, and salt until smooth.
Toss Together: Pour the dressing over the slaw and toss until all the vegetables are evenly coated.
Chill: Refrigerate for at least 1 hour before serving to allow the flavors to develop.
Garnish & Serve: Just before serving, sprinkle with green onions and raw ramen noodles for an irresistible crunch.
