Gluten-Free Greek Pasta Salad

Ingredients
  

  • 8 oz Chickpea Penne Pasta
  • 1/2 cup Diced Red Onion
  • 1/4 cup Cherry Tomatoes
  • 1/3 cup Crumbled Feta
  • 1/3 cup Greek Dressing

Instructions
 

  • Cook the pasta according to the package. Strain and rinse.
  • In a mixing bowl, combine tomatoes, red onion, and cucumbers. Toss with pasta.
  • Drizzle Greek dressing over the pasta salad. Refrigerate for 1 hour before serving.
  • Serve with feta crumbles on top.

Notes

This pasta salad pairs great with grilled steak or chicken, or served as a quick vegetarian lunch option. The longer is can sit in the fridge, the more the flavors can marry and deepen.
