Ingredients
  

  • 3 eggs beaten
  • 15 ounces ricotta cheese
  • 8 ounces chopped spinach
  • 4 ounces crumbled feta cheese
  • ½ cup finely diced red onion
  • 2 tablespoons grated Parmesan cheese
  • Pinch of salt
  • Pinch of pepper
  • Dash of nutmeg
  • 4 tablespoons melted butter

Instructions
 

  • Preheat your oven to 350°F. In a large mixing bowl, combine all the ingredients—beaten eggs, ricotta, spinach, feta, red onion, Parmesan, salt, pepper, and nutmeg.
  • Pour in the melted butter and stir everything together until it’s well mixed and evenly combined.
  • Next, spread the mixture into a lightly greased 8x8-inch baking dish, smoothing it into an even layer.
  • Bake for 40 to 45 minutes, or until the edges are slightly browned and the center is just set. You’ll know it’s ready when the top looks golden and a small knife inserted in the center comes out clean.
  • Let it cool for a few minutes before slicing. The bake will firm up slightly as it rests, making it easier to serve perfect squares.

Notes

Once you’ve made it a few times, you might want to experiment with different additions. Try folding in a handful of fresh herbs like dill or parsley for even more Greek flavor. A few sun-dried tomatoes or roasted red peppers add a touch of color and sweetness. You can even sprinkle a bit of extra Parmesan or feta on top before baking for a more golden, cheesy crust.
